More good cooking

Last night was the night to make that cheesy noodle recipe with the frozen egg noodles I did not use on the night we ended up eating fried chicken. I planned a meatless dinner since we are getting to the bottom of our freezer stash and the only meat left in there was a bag of chicken nuggets we are eating tonight. When I told Brent it would be a meatless dinner he actually gave me the pout lip and so I had to come up with something better. I told him the only other meat we really had was bacon and he said hey that actually sounds good so Daddy Mac n Cheese was born.

What you need:

1 Stick of butter
6 TBSP flour
squirt of mustard
dash of salt and pepper
4 cups of milk
1 pound of cheddar cheese shredded plus a little more if you like it cheesy I added in a little bit of Wisconsin cheddar I had sitting in the cheese drawer.
2 bags of the 16 oz frozen Ms. Reames Egg Noodles
about a pound of thick cut apple wood smoked bacon cut up into little pieces

To start get the water boiling for your noodles. Making two bags usually takes a little bit more time so I always start that first. Once the water is at a boil just follow the instructions on the bag. 

In the mean time fry up your cut up pieces of bacon in a pot. Save a little bit of the grease in the pot maybe about two to four tablespoons. After the bacon is nice and crispy set it aside on a paper towel and toss in the stick of butter to start melting in the grease. If you have a block of cheese now is a good time to start shredding it. Once the butter has melted add in the mustard, salt, pepper and flour stirring until it is nice and smooth. Slowly stir in the milk and turn it up to a medium high stirring constantly add in the cheese and turn the heat down to low. Stir until all the cheese is good and melted then turn off the heat. By this time your noodles should be done. Drain them and mix in the cheese sauce and bacon until they are well blended and pour into a 13x9x2 casserole dish. Bake at 350 for about 30 minutes until heated through. Let it sit about ten minutes before serving and there you have it Daddy Mac n Cheese.
